Ras Malai – Soft Indian Dessert with Creamy Milk

Some foods are not only delicious but also bring back memories.
For me, Ras Malai is one of those desserts.
Whenever there was a special occasion, like Eid, a birthday, or a family gathering, my grandmother would always make Ras Malai.

The whole house would be filled with the aroma of milk and cardamom.
We all stood by the stove, eagerly waiting to taste it.
Last week, I made Ras Malai myself.
During the family dinner, everyone was amazed that I used my grandmother’s old recipe.
As soon as the Ras Malai was served and the first piece was dipped in the sweet milk, everyone clapped happily.

It was truly magical.

Ingredients:
Panir (soft, made from milk) - 250 grams
Milk - 1 liter
Sugar - 1/2 cup
Cardamom powder - 1 teaspoon
Nuts (almonds/pistachios) - for garnish
Directions:
Boil the milk until it thickens.
Add sugar and cardamom powder.
Make small circles with the paneer and dip them in the milk; cook for a few minutes.
Serve in bowls and garnish with nuts.
Serving:
Serve chilled. Every bite brings back memories and fills your home with a nostalgic aroma.
