Chicken Karahi – A Story from Khala’s Kitchen

Last Sunday, everyone visited my aunt's place, as soon as we opened the door, the entire house was filled with the heavenly smell of spices and tomatoes. My mother inquired like an aunt:
"Baji! Today what special thing is being prepared?"
My aunt smiled and replied: "Chicken Karahi is being prepared for you all today!" ????

My mother and I were standing beside my aunt, my aunt was heating oil in a pan. She put two medium-sized onions into it and fried them until they became light golden. Then she poured in one kilo pieces of chicken and continued frying them on high heat until the meat's color changed.

She then incorporated ginger garlic paste (2 tablespoons), and added salt, red chilli powder (1½ teaspoon), turmeric (½ teaspoon) and coriander powder (1 tablespoon) and combined them.

Then my aunt added four tomatoes, medium in size, and covered the pan. When she opened the lid after 15 minutes, the smell and thick gravy made the kitchen even more delectable. He also added a half cup of curd and fried well until the oil rose.

He then put in four green chillies and half a teaspoon of hot spices, and left the pan on the stove for another five to seven minutes.

Lastly, he topped the dish with fresh coriander and long slices of finely chopped ginger.

We all sat around the table and as soon as we consumed the Chicken Karahi with naan, each bite was imparting a magic of aroma and flavor on the tongue. Aunty's smile was also evident that everyone enjoyed the food so much.

Ingredients (serving 4-5 people)
Chicken: 1 kg
Onion: 2 medium
Tomatoes: 4 medium
Yogurt: ½ cup
Ginger-garlic paste: 2 tablespoons
Green chilies: 4-5
Red chili powder: 1½ teaspoons
Turmeric: ½ teaspoon
Coriander powder: 1 tablespoon
Garlic spice: ½ teaspoon
Salt: To taste
Fresh coriander and finely chopped ginger: For garnish
Oil: ½ cup
How to serve:
Serve hot with naan or tandoori roti, and trust me, this Chicken Karahi will be the star of your dinner.
