There are certain foods that not only charge the body but also calm and uplift the mind. For me, the Quinoa & Veggie Power Bowl is one of them.
I still recall the first time my grandma prepared this at home. The sun was shining brightly through the kitchen window in the morning and my mom said, "Let us make something healthy and colorful today." Everyone was present in the kitchen—someone was cutting fresh vegetables, someone was rinsing quinoa, and Grandma was blending vegetables and spices. The smell of roasted vegetables and herbs filled the kitchen and the air was warm and welcoming.
Last week, I prepared this Quinoa & Veggie Power Bowl for my family, just like Grandma, and not only was it healthy but also a wonderful moment.
Ingredients:
Quinoa: 1 cup
Water or vegetable broth: 2 cups
Broccoli: 1 cup
Carrot: 1 medium, chopped finely
Red bell pepper: 1 cup, chopped
Cherry tomatoes: ½ cup, halved
Olive oil: 2 tablespoons
Garlic: 2 cloves, crushed
Lemon juice: 1 tablespoon
Salt and pepper: to taste
Fresh coriander or parsley: for garnish
Optional: Grilled tofu or chicken for protein
How to make:
Step 1 – Cook the quinoa:
Rinse the quinoa under cold water. Put the quinoa and water or vegetable broth in a pot and bring to the boil, then cover and cook over low heat for 15 minutes until tender and fluffy.
Step 2 – Roast the vegetables:
Toss together the broccoli, carrots, and bell peppers with olive oil, garlic, salt, and pepper. Bake in a preheated oven at 200°C (390°F) for 15 minutes, or until the vegetables are cooked through but remain slightly crunchy.
Step 3 – Prepare the bowl:
Put the cooked quinoa into a large bowl, top with the roasted vegetables, cherry tomatoes, and protein if using. Squeeze over the lemon juice and sprinkle with fresh coriander or parsley.
Serving time:
As we all sat down to have this power bowl for dinner, the vibrant colors and fresh scent of the vegetables put everyone in a good mood. The initial bite was crunchy, flavorful, and full, and we were all energized.
No body looked at their phone, the TV was turned off—the morning ambiance was peaceful, and we laughed and talked over every bite. This was not only a healthy meal; It was a moment of Baji's efforts and our joys
